2 Ridge Gourds
1 Medium Size Potato
1/2 Cup Gram Flour
1/4 Cup Breadcrumbs
1/4 Cup Finely Chopped Onion
1/4 Cup Finely Chopped Coriander
1/4 Teaspoon Grated Ginger
1/4 Cup Lemon Juice
1/2 Teaspoon Cumin Seeds
1/2 Teaspoon Coriander Powder
1/2 Teaspoon Garam Masala Powder
1 Tablespoon Grated Cheese
Salt to taste

How to make Crispy Ridge Gourd Tikki?

To make crispy ridge gourd tikkis, first wash the ridge gourd thoroughly, peel it, and grate it. Then, boil the potatoes, peel them, and grate them as well, and set them aside.

Now place the grated ridge gourd in a muslin cloth and squeeze out any excess water. This step is crucial, as any moisture left in the ridge gourd will cause the tikkis to become unstuck and break during frying.

Next, combine the squeezed ridge gourd, grated potatoes, gram flour, breadcrumbs, finely chopped onion, coriander leaves, ginger, lemon juice, cumin seeds, coriander powder, and garam masala in a large mixing bowl and mix well. Be careful not to add salt and cheese just yet. Salt can cause the ridge gourd to release water again, so it’s best to add it at the end.

You can make the taste of tikki even more special by adding different spices and seasonings as per your choice.

Now heat enough oil in a pan to shallow fry the tikkis. If desired, you can also deep fry them.

Just before frying, add salt and cheese to the mixture and mix well again. Divide the mixture into 8-10 equal portions and shape each portion into a round tikki.

When the oil is hot, add 3-4 tikkis to the pan at a time and cook on medium heat for 3-4 minutes on each side. Cook the tikkis until they are golden, crispy, and well-crushed.
